Ingredients
2 cups sweet winter squash, cooked and puréed
2 cups sunflower seeds, finely ground
1 ½ cup maple syrup
½ cup avocado or sunflower oil
2 teaspoons salt
2 ½ -3 cups gluten-free flour**
¾ cup chokecherry or other seasonal jam
1/2-1 cup sunflower seeds or sesame seeds for rolling
Directions
Preheat oven to 350°F (175°C) and line cookie sheet with parchment paper.
Mix first 4 ingredients together in a large bowl.
Incrementally mix in flour until desired consistency.
Scoop into balls approximately 2 tablespoons.
